When you buy our locally farm-raised beef, you can be assured these animals have been humanely raised on the beautiful pasture fields of the Shenandoah Valley.  They are not fed growth hormones or antibiotics.  They are finished on locally grown corn and grain, which enhances the quality and flavor of the finished meat.

You'll know your food is locally processed -
Our beef cattle are processed by local, certified humane, USDA inspected beef processors.  We use great care in selecting our processors, which includes personally touring their facilities.

Safe and Convenient Packaging -

Our beef is dry-aged for a minimum of 10-14 days.  Then it's custom butchered, frozen fresh and vacuumed-packed to safely preserve it's quality.  No artificial dyes, ingredients or preservatives are added. The frozen, vacuum-packed beef will stay fresh and flavorful in your freezer for months and is quick and easy to thaw when you are ready to prepare your meal.

Sloppy Joes

Total Recipe Time:  20 minutes

1 pound ground beef
1 small onion, chopped
3/4 cup prepared barbecue sauce
1/4 teaspoon salt
1/8 teaspoon black pepper
4 hamburger buns hamburger buns
American cheese slices, green bell pepper rings (optional)


 

1.

Heat large nonstick skillet over medium heat until hot. Add ground beef and onion; cook 8 to 10 minutes, breaking into small crumbles and stirring occasionally. Pour off drippings.

Stir in barbecue sauce, salt and pepper; heat through. Serve in buns with cheese and bell pepper.


Makes 4 servings

Brew Burgers

Total Recipe Time:  30 minutes

1 ½ lbs ground beef

¼ cup beef

¼ cup prepared steak sauce

4 slices sweet onion (2 ½ inch)

4 slices (1 ounce each) swiss cheese

4 crusty rolls, split

Lettuce leaves

  1. Combine beef and steak sauce in 1-cup glass measure.  Cover and microwave on HIGH 1 to 1 ½ minutes or until bubbly.
  2. Lightly shape ground beef into four ¾ inch thick patties.  Place patties in center of grid over medium, ash-covered coals; arrange onion around patties.  Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, 13 to 14 minutes) until instant-read thermometer inserted horizontally into center registers 160 degrees F, turning occasionally.  Season with salt after turning.  About 2 minutes before patties are done, brush generously with sauce; top with cheese.
  3. Serve burgers and onions in rolls with lettuce and sauce.

Caesar Steak Sandwiches

 

Total Recipe Time:  20 to 25 minutes
Marinade Time:  30 minutes to 2 hours

1 pound boneless beef top sirloin or top round steak, cut 3/4 inch thick or flank steak
1/2 cup prepared non-creamy Caesar dressing
2 cups coarsely chopped romaine lettuce
1/4 cup shredded Parmesan cheese
4 hoagie rolls (6 inches long each), split, toasted

 

Cut beef steak lengthwise in half, then crosswise into 1/8 to 1/4-inch thick strips. Reserve 2 tablespoons dressing. Pour remaining dressing in medium bowl. Add beef; toss to coat. Cover and marinate in refrigerator 30 minutes to 2 hours.

 

Remove beef from marinade; discard marinade. Heat large nonstick skillet over medium-high heat until hot. Add 1/2 of beef; stir-fry 1 to 2 minutes or until outside surface of beef is no longer pink. (Do not overcook.) Remove from skillet; keep warm. Repeat with remaining beef.

Toss lettuce with reserved dressing and 2 tablespoons cheese in medium bowl. Divide evenly over bottom of each roll. Top with beef; sprinkle with remaining cheese. Close sandwiches.

Makes 4 servings.

Nacho Dip

1 lb ground beef
2 lbs. American cheese, cubed
16 oz. jar salsa (mild,medium or hot--your choice)
1 Tbsp. Worcestershire sauce
Tortilla chips

Brown beef, crumble into small pieces, and drain.

Combine beef, cheese, salsa and Worcestershire sauce in slow cooker.

Cover.  Cook on High 1 hour, stirring occasionally until cheese is fully melted.

Serve immediately, or turn to low for serving up to 6 hours later.
